Best Ever Blueberry Muffins

I have made these Blueberry muffins many times and I can say that everytime I feel the need to slap somones mom.....it's a southern saying no one every really gets slapped but these are the BEST EVER BLUEBERRY MUFFINS!!!!!

Ingredients
  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh blueberries
  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup butter, cubed
  • 1 1/2 teaspoons ground cinnamon

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
  2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  3. To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  4. Bake for 20 to 25 minutes in the preheated oven, or until done.

Puppy theme Baby Shower cake

This was a little difficult to come up with a design for a baby shower and dog.  After much praying and circling the cake a time or two here it is.  The bottom layer is red velvet with a cream cheese filling and the top layer is chocolate with a cream cheese filling....all covered and decorated in Satin Ice fondant.

Crash Hot Potatoes

These are the bestest potato's in the world.  My husband begs for these. I can use them to even brib him into doing anything I want him to do.  He will even go shopping if I promise to make these.  This is a recipe from www.pioneerwomancooks.com and this is just one of MANY great recipes from her website.  I am living right now for her next cook book that will be coming out in March.

Recipe: Crash Hot Potatoes

Ingredients

  • 12 whole New Potatoes (or Other Small Round Potatoes)
  • 3 Tablespoons Olive Oil
  • Kosher Salt To Taste
  • Black Pepper To Taste
  • Rosemary (or Other Herbs Of Choice) To Taste

Preparation Instructions

Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender.
On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato.
With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with more olive oil.
Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.)
Bake in a 450 degree oven for 20-25 minutes until golden brown.
